Pork Rib & Yam Soup | Step 1: Chop 600g pork ribs, start them in cold water with ginger, bring to the boil, skim the scum and rinse in warm water.
Pork Rib & Yam Soup | Step 2: Peel 400g Chinese yam and cut into rolling chunks, keeping them in water so they do not darken. Wear gloves — the sap itches.
Pork Rib & Yam Soup | Step 3: Put the ribs in a pot with 2 litres of water, 3 slices of ginger and 15ml Shaoxing wine. Bring to the boil, then simmer gently for 40 minutes.
Pork Rib & Yam Soup | Step 4: Add the yam and simmer for another 20 minutes, until the ribs fall from the bone and the yam is floury and soft.
Pork Rib & Yam Soup | Step 5: Season with 6g salt just before turning off the heat. Salted early, the ribs go stringy.
