Farmhouse Stir-Fried Pork | Step 3: Heat the wok dry, without oil. Add the fatty pieces first and render over medium heat for 3 minutes until they curl slightly.

Farmhouse Stir-Fried Pork | Step 4: Add the lean pieces and fry for 1 minute, then add 10ml Shaoxing wine and 15ml light soy sauce, toss and lift out.

Farmhouse Stir-Fried Pork | Step 5: Using the rendered lard, fry the chillies and garlic over high heat for 2 minutes until the skins blister.

Farmhouse Stir-Fried Pork | Step 6: Return the pork, add 3g salt and toss over high heat for 30 seconds. The chillies need to be blistered to taste right.
