Sweet & Sour Spare Ribs | Step 1: Chop 700g pork ribs into segments. Start them in cold water with ginger, bring to the boil, skim the scum, then lift out and rinse in warm water.

Sweet & Sour Spare Ribs | Step 2: Heat 20ml oil in the pot and fry the ribs over medium heat for 5 minutes until golden.

Sweet & Sour Spare Ribs | Step 3: Mix 30ml light soy sauce, 45ml black vinegar, 45g sugar and 15ml Shaoxing wine, and pour it in.

Sweet & Sour Spare Ribs | Step 4: Add hot water to cover the ribs, bring to the boil, then turn down, cover and simmer for 30 minutes.

Sweet & Sour Spare Ribs | Step 5: Uncover, turn the heat to high and reduce for 5–8 minutes, turning constantly so the caramel coats evenly.

Sweet & Sour Spare Ribs | Step 6: Stop when the sauce is thick enough to cling to a spoon. Reduce it too far and it turns bitter — when the large bubbles become small ones, it is done.
