Steamed Chicken with Shiitake

Steamed Chicken with Shiitake | Step 1: Chop 500g boneless chicken thigh into 3cm pieces. Soak 6 dried shiitake, squeeze dry and slice, reserving 30ml of the soaking liquid.

Steamed Chicken with Shiitake | Step 2: Toss the chicken with 20ml light soy sauce, 10ml Shaoxing wine, 2g salt, 3g sugar, 8g cornflour and the reserved soaking liquid.

Steamed Chicken with Shiitake | Step 3: Mix in the shiitake and 10g shredded ginger, then marinate for 15 minutes so the cornflour drinks up the liquid.

Steamed Chicken with Shiitake | Step 4: Spread flat in a deep dish, no more than 3cm thick — any deeper and the centre will not cook through.

Steamed Chicken with Shiitake | Step 5: Steam over a rolling boil on high heat for 15 minutes.

Steamed Chicken with Shiitake | Step 6: Turn off the heat and let it stand, covered, for 2 minutes before opening. Scatter with spring onion and serve.
